      1. Tout commence par la r\u00e9ception des mati\u00e8res premi\u00e8res, il faut v\u00e9rifier que la marchandise est conforme \u00e0 nos attentes.<\/li>
      2. Une fois la v\u00e9rification de la marchandise, elle est imm\u00e9diatement entrepos\u00e9 au frais dans la chambre froide.<\/li>
      3. Les viandes sont progressivement d\u00e9coup\u00e9es et par\u00e9es pour la fabrication de la charcuterie artisanale.<\/li>
      4. Les viandes destin\u00e9es \u00e0 la charcuterie sont ensuite sal\u00e9es
        – Salage \u00e0 sec
        – Mise en saumure
        – L’injection<\/li>
      5. Les viandes sont par\u00e9es, pr\u00e9par\u00e9es et hoch\u00e9es dans un cutter. Cela permet de transformer les morceaux de viandes en parts fines telles que les saucisses blanches, knacks…
        Les pr\u00e9paration sont assaisonn\u00e9es lors de la pr\u00e9paration<\/li>
      6. Vient ensuite la mise en boyaux avec le poussoir et la cuisson, le s\u00e9choir ou le fumoir\u00a0<\/li>
      7. Apr\u00e8s refroidissement nos produits sont pr\u00eats \u00e0 \u00eatre consomm\u00e9s.<\/li><\/ol>\t\t\t\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t
